Grilled Teriyaki Chicken Skewers
Ingredients:
500g boneless, skinless chicken breasts, cut into 2.5cm pieces
1/4 cup low-sodium soy sauce
2 tbsp honey
2 tbsp rice vinegar
2 tbsp brown sugar
1 tbsp sesame oil
2 garlic cloves, minced
2 tbsp fresh ginger, grated
2 tbsp cornstarch
2 tbsp water
Sesame seeds, for garnish
Skewers (if using wooden skewers, soak in water for 30 minutes before using to prevent burning)
Instructions:
In a small saucepan, whisk together the soy sauce, honey, rice vinegar, brown sugar, sesame oil, garlic, and ginger.
Heat over medium heat until the sugar has dissolved and the mixture begins to simmer, about 5 minutes.
In a small bowl, whisk together the cornstarch and water until smooth.
Gradually add the cornstarch mixture to the saucepan, whisking constantly, until the mixture thickens, about 2 minutes.
Remove from heat and let the sauce cool to room temperature.
Thread the chicken pieces onto skewers, leaving a little space between each piece.
Brush the teriyaki sauce over the chicken, making sure each piece is well coated.
Heat the grill to medium-high heat and lightly oil the grates.
Place the skewers on the grill and cook for 5-7 minutes on each side, until the chicken is cooked through and the exterior is caramelized and slightly charred.
Brush with additional sauce and sprinkle with sesame seeds before serving.
