Ingredients:
1 lb (450 g) ziti pasta
1 lb (450 g) ground beef
1/2 cup (120 mL) diced onion
2 cloves garlic, minced
1 can (28 oz or 794 g) crushed tomatoes
1/4 cup (60 mL) tomato paste
2 teaspoons (10 mL) dried oregano
2 teaspoons (10 mL) dried basil
1/2 teaspoon (2.5 mL) salt
1/4 teaspoon (1.25 mL) black pepper
1/4 teaspoon (1.25 mL) red pepper flakes
1 cup (240 mL) water
1 cup (120 g) shredded mozzarella cheese
1/2 cup (50 g) grated Parmesan cheese
Chopped fresh parsley, for garnish
Instructions:
Preheat a campfire or grill to medium-high heat.
Cook the ziti pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
In a large skillet, cook the ground beef and diced onion over medium heat, stirring frequently and breaking up the beef with a spoon, until the beef is browned and the onion is softened. Add the minced garlic and cook for an additional 30 seconds.
Add the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, black pepper, red pepper flakes, and water to the skillet, and stir to combine. Simmer for 10 minutes, stirring occasionally.
In a large cast iron Dutch oven or other oven-safe pot, layer half of the cooked ziti pasta, then half of the meat sauce, and then half of the shredded mozzarella and grated Parmesan cheese. Repeat with another layer of pasta, meat sauce, and cheese.
Cover the Dutch oven with a lid, and place it on the campfire or grill. Cook for 15-20 minutes, until the cheese is melted and the sauce is bubbly.
Remove the Dutch oven from the heat, and let it cool for a few minutes. Garnish with chopped fresh parsley, and serve the campfire baked ziti hot, and enjoy as a comforting and filling meal!
