We're heading off for a two week 4x4 trip through Mozambique and Zimbabwe. Won't be passing too many bakeries along the way... so would be grateful for any quick and easy campfire bread recipes. My fallback is always a beer bread, but anyone got anything new and exciting?

Every one in Mozambique bakes bread and you will find a baker in any village. Nothing like fresh "pau". They dont keep long, so try and buy (VERY CHEAP) every morning.

I have also downloaded the recipe book and have often made my variation of a pot brood. It is similar to Maria's but the quantities are very different. The baking method is exactly the same.

 

Here is mine.

2 large cups of self raising flour (Almost 1 x 500g pack)

1 pkt Brown Onion Soup

1 carton buttermilk (500 ml)

1 tsp Celery Salt

1 tsp mixed herbs

2 TBsp grated cheddar cheese,

 

Mix all together (Not too stiff or too soft). Put in a bread pot and top with a bit more grated cheese. Bake as per the pot brood recipe.

Thanks Alex. Looks great, I'm a big fan of brown onion soup - it perks up lots of things: potjies, meatballs etc. In fact I made a bunch of meatballs today to freeze and take with for lazy lunches (and of course amongst other things they had brown onion soup in them!)
