The RETIRED Boring Camper
500 g chicken breasts – deboned - and skin removed.
25 ml tomato paste.
5 ml curry powder.
25 ml soya sauce.
1 can (410 g) Apricot halves in natural juice – drained. (Retain the juice)
2 onions – cubed.
1 green pepper – cubed.
Olive oil for frying.
Mix the tomato paste, curry powder, soya sauce, and apricot juice together. This is your marinade.
Thread the chicken, onion, green pepper and apricots on skewers.
Marinate for an hour or two.
Heat the oil in the Skottel and fry the kebabs on both sides basting often with marinade until cooked through.
I pre-cooked the chicken first in the microwave. The next time, I will first do them over the coals just for fun.
